The harvest is done by dogs only during certain times of the year, when spores are ready. Types: Black Truffle, White Truffle, Summer black Scorzone, Bianchetto, Black moscato Truffle.<\/p>\n<ul>\n<li><strong style=\"color: #000000; font-style: normal;\">Norcineria and cheese<\/strong><\/li>\n<\/ul>\n<p>In Umbria Norcineria is a butcher&#8217;s shop and Norcino is the person that prepares and sells pork products, such as prosciutto di Norcia IGP, Salami, Sausages as well as pecorino cheese.<\/p>\n<ul>\n<li><strong style=\"color: #000000; font-style: normal;\">Agriculture<\/strong><\/li>\n<\/ul>\n<p>An ancient tradition links Umbria to farming and agriculture. Different and typical products are cultivated, such as: Cannara onions, Colfiorito red potatoes, Trevi celery, Spelt, Mushrooms, Saffron from Cascia and Citt\u00e0 della Pieve, Castelluccio lentils.<\/p>\n<ul>\n<li><strong style=\"color: #000000; font-style: normal;\">Chocolate<\/strong><\/li>\n<\/ul>\n<p>Since 1907, Perugia is identified with chocolate, thanks to the extraordinary story of Perugina.
